I have been so excited to share this dish with you all. Since I whipped up this recipe, I have literally been preparing it at least twice a week. Sometimes as a light lunch and sometimes as a side dish.
This recipe combines both sweet and savory flavors and is full of gorgeous color.
Servings: 4
Ingredients:
- 2 large sweet potatoes
- 2 tbs extra virgin olive oil
- ½ yellow onion, roughly chopped
- 1 1/2 cups of spinach
- ½ red pepper, roughly chopped
- 1 tsp minced garlic
- 1 ½ tbs dill, minced
- 3 tsps chipotle seasoning
- ¼ tsp salt
Directions:
Peel and cube the sweet potatoes and place them into a medium sized saute pan on medium heat. Drizzle the olive oil over and cover the pan with a lid, allow to cook for 10 minutes. Then add the pepper, onion, spinach, salt and seasoning. Mix well. Cover with lid and cook on low for 20 minutes, allowing potato to soften. When ready to serve, mix in minced dill.
Serving tip: This side dish pairs wonderfully with rotisserie chicken or beef tenderloin.
Great use of dill. I love seeing it used as my mum always cooked with it growing up. I bet rosemary would taste good with the sweet potatoes as well. :] // itsCarmen.com ☼

I have tried potatoes with herbs, but not Sweet Potato & Herbs.
