I am a huge iced tea fan and love brewing it myself at home for that extra fresh taste. A go-to flavor of mine is raspberry, you can find it at most supermarkets. I actually experienced an “a-ha” moment while drinking the tea today, wondering why in the world have I never added booze to this?! A question that naturally arises more often than not. So right then and there I decided a Raspberry Tea Mojito would happen.
- 1 cup freshly brewed raspberry tea
- 1 1/2 oz mint simple syrup, recipe below
- 1 oz freshly squeezed lime juice
- 2 oz white rum
- mint sprigs for garnish
For mint syrup:
- 1 cup sugar
- 1 cup water
- 1 bundle of mint sprigs
For syrup place all ingredients in a small saucepan and cook on medium heat, stirring continuously, until the sugar is melted. Then allow to cool and sit until thickened. Strain into jar.
For mojito, pour the mint syrup in the bottom of the glass, add in ice cubes and squeeze 1 ounce of lime juice into cup-stir this for a sec. Then add in a few slices of lime, followed by 1 cup of the tea and 2 ounces of white rum. Garnish with mint sprig.
This drink will definitely be a favorite of mine going into the warmer seasons. Cheers!
