There is no time like the holiday season to indulge in a spiced cocktail. I love whipping up these style of cocktails up for the hubby and I for a date-night in. There is something cozy about spiced cocktails that makes the perfect night cap on a chilly night. This Ginger Bee Cocktail is perfectly balanced, not too sweet and not too spiced. I think it would make a great holiday party drink to serve guests too!
For Honey Ginger Syrup
- ½ cup honey
- ½ cup water
- 1-inch piece fresh ginger, peeled and cut into pieces
Directions:
In a small saucepan, combine honey, water and ginger pieces. Bring to a boil, then reduce to low heat and allow to simmer, while occasionally stirring. Let simmer for 35 minutes. Pour the syrup through a strainer into a jar. Discard the ginger pieces and let the syrup cool before sealing the jar. The syrup can store in the fridge for up to 2-3 weeks.
Servings: 2
For cocktail:
- 4 ounces spiced rum
- ½ cup lime flavored seltzer water
- 2 TBS honey ginger syrup
- 4 ounces apple juice (I prefer apple nectar-it’s a more intense and natural apple flavor
Directions:
Fill two rocks glasses with crushed ice. Add 2 ounces apple juice or nectar, 2 ounces spiced rum, and 1 tbs honey ginger syrup in each glass. Top with ¼ cup lime seltzer water each. Give them a good stir and serve!
