By now I think you know I’ll drink anything with tequila in it. But I was craving something just a little fruity and I’m kind of on a coconut kick, so I decided to put together this Blueberry Coconut Margarita recipe. I actually had everything in my pantry already, and you might too!
This is so delicious. I didn’t make it too sweet and went a little heavy with the lime, so it wouldn’t taste anything like a Pina Colada. The end result, YUM. The blueberries are subtle, but add a nice berry taste to the drink.
Servings: 2
Ingredients:
- 1 (15-ounce) can Cream of Coconut, you will use 8 oz.
- 4 oz tequila
- 1/4 lime juice
- 3 tbs agave
- a handful of blueberries, approximately like 10
Directions:
In the bottom of your cocktail shaker, muddle the blueberries until it looks like all of the juice is out of them. Pour in lime juice, cream of coconut, tequila and fill to the top with ice. Shake for a minute or until shaker is completely covered in condensation. Pour evenly into each glass. Add 1 1/2 tbs of agave into each glass and give a gentle stir. Pour a few ice cubes or one big one into each glass. Serve!
For garnish: a lime, a few blueberries on the top or even some coconut flakes on the rim-that would be cute!
I would have never thought of this mix of coconut with tequila. Genius !!!
