What is it about pomegranate that’s so fancy? I find it such a classy little fruit and anytime it’s in a drink on a menu I feel compelled to order it, considering I’ve never had a pomegranate cocktail that’s steered me wrong. That being so, I decided to create one perfect for the holiday season, from it’s festive appearance to it’s fizzy goodness. I know I’ll be making this Sparkling Pomegranate Rose Cocktail many more times this season!
Sparkling Pomegranate Rose Cocktail
Servings: 2
Ingredients:
- 3 1/2 oz. cava or prosecco
- 4 oz. 100% pomegranate juice, choose a good quality brand-I used POM Wonderful
- 1 oz. gin, I used St. Augustine Distillery Gin. You can substitute with St. Germaine, if Gin isn’t your thing. I liked the touch of juniper with the pomegranate, but the flowery notes of St. Germaine would work well too
- 1 oz rose simple syrup, my favorite is Royal Rose‘s Rose Simple Syrup
Directions:
In a cocktail shaker, pour pomegranate juice, gin and rose simple syrup. Put a handful of ice cubes, not a lot. I gave everything more of a swirl than shake, just enough to combine the ingredients. Pour mixture evenly into two champagne flutes. Top off each evenly with the cava or prosecco and garnish with several pomegranate seeds. Viola! A beautiful and delicious drink to toast with this season 🙂
