Buffalo Chicken Sliders with Apple Coleslaw

With the Superbowl coming up this Sunday, I wanted to share with you all a yummy recipe that would be perfect for game-day. I asked the hubs what kind of thing he’d like to eat while watching the game and he first said buffalo chicken dip. I wanted make something with a little more flavor and a bit heartier, so I went with these Buffalo Chicken Sliders with Apple Coleslaw. YUM.

He loved them, I loved them and these are now on my weekly lunch menu!

Pictured above is the homemade honey pepper dressing to drizzle over the apple coleslaw. The perfect mix of salty and sweet to accompany it!

And the ultimate finishing touch was sprinkling some crumbled gorgonzola cheese on each slider. Although blue cheese is generally considered the best cheese to pair buffalo flavors with, if you’re not a big blue cheese fan like myself, gorgonzola is a great substitute. It has similar texture and flavor notes, without being as potent.

I also wanted a cheese that wouldn’t overpower the honey pepper dressing.

And choosing Hawaiian rolls to build these sliders on was a no brainer. Hawaiian rolls make everything better!

Buffalo Chicken Sliders with Apple Coleslaw

Buffalo Chicken:

  • 4-6 chicken breasts
  • 1 16 oz. bottle of your favorite buffalo sauce, I like Moore’s Original
  • 2 tbs garlic powder
  • 2 tbs brown sugar or honey

Place all ingredients in a slow cooker and cook on low for 5 hours. At the 4 hour mark, take out the chicken breasts, shred them, then place back into slow cooker. At 5 hour mark, scoop out shredded chicken with a spoon that has holes to drain the majority of the liquid and place shredded chicken into a bowl.

Apple Coleslaw:

  • 1 bag of pre-cut coleslaw (just to make things easier/quicker)
  • 1 honey-crisp apple, pitted and julienned

Mix all together in a bowl.

Honey Pepper Dressing:

  • 3 tbs apple cider vinegar
  • 1/2 cup mayonnaise
  • 5 tbs honey
  • 2 tsp salt
  • 2 tsp freshly ground pepper

Mix all ingredients together in a small bowl.

Other Ingredients:

  • 1 Pack of Hawaiian rolls
  • 1 container of crumbled gorgonzola cheese

Assembly:

  1. Slice open Hawaiian rolls. Scoop the buffalo chicken on the roll. Sprinkle the apple coleslaw on top, then drizzle over it the honey pepper dressing. Top it off with the crumbled gorgonzola cheese!
