Pesto Mushroom and Honey Chicken Pasta Recipe

There is really nothing like a recipe that includes fresh basil, and when you can keep it uncooked, even better. Pesto is one of my favorite sauces to incorporate into dishes and it’s so easy to make. Homemade pesto is about 150% better than store-bought because, you guessed it, that freshhhh basil. Makes such a big difference.

This Pesto Mushroom and Honey Chicken Pasta Recipe took me 20 minutes to make and tastes great warm and cold. Which means it makes for a great weekday dinner and leftover lunch!

Pesto Mushroom and Honey Chicken Pasta Recipe

Ingredients:

Pesto Sauce

  • 1 cup walnuts
  • 1/2 cup extra virgin olive oil
  • 1 cup chopped fresh basil
  • 1 tsp pepper
  • 1 tsp salt
  • 2 tbs minced garlic
  • 2 tsp lemon juice
  • 1 tsp brown sugar
  • 1/3 cup grated parmesan

Sautéed Honey Chicken

  • 3 chicken breasts
  • salt and pepper to taste
  • 3 tbs honey
  • 2 tbs garlic
  • splash of extra virgin olive oil in the pan

Other

  • 1 box pasta, I like to use veggie pasta
  • grape tomatoes, sliced

Directions:

Pesto Sauce

Place all ingredients in a food processor or high quality blender that can get the ingredients fine enough.

Sautéed Honey Chicken

Pour extra virgin olive oil in pan and place chicken breasts in pan. Add in all other ingredients, except honey. Sautéed until chicken until cooked. Stir in the honey and let it brown the chicken. Cut into small pieces.

Mix in your preferred amount of pesto sauce and the chicken into a bowl with the cooked pasta and sliced grape tomatoes and mix together.
