I can’t get enough of this 1800 Coconut Tequila. I talked about it in my links & things post and it’s been my go-to drink this summer. And now, so is this Coconut Popsicle Margarita.

While I’ve been drinking this 1800 coconut tequila with a splash of seltzer, (sometimes choosing a lime-flavored seltzer too) I knew it was only a matter of time before I needed to make a margarita with this deliciousness. No surprise, it tastes wonderful.

This drink is yummy because of it’s simplicity, but since it’s summertime, I like to give cocktails a little extra pizazz. I decided to add in an organic coconut popsicle and the result is not only cute, but tasty too! The popsicles offer some sweetness to the margarita.

*If you want to add the popsicle, but prefer to keep your margarita more zesty and less sweet, skip the agave when creating the drinks. Since the popsicle will end up melting into your margarita-which is welcomed!

Coconut Popsicle Margarita Recipe


Servings: 2

Ingredients:

  • 2 oz lime juice 
  • 1 ounce triple sec
  • 3 ounces tequila
  • 1 ounce agave
  • 2 1/2 oz coconut water
  • 2 coconut popsicles, I used Solero
  • coconut flakes for glass rims

Directions:

Dip the rims of 2 margarita glasses in coconut flakes. (tip* I actually used agave on the rims to help the coconut flakes stick) Place all ingredients in a cocktail shaker filled with ice and shake for 10 seconds. Pour evenly into the 2 glasses, including the ice. Dip in a coconut popsicle and grab your sunnies, because you’re ready for the pool!
