Two recipes in one week? That’s what Fall does to a girl. I’m currently going a little crazy with work and life right now and yet I’m still finding myself in the kitchen whipping up some Fall goodies. I just can’t help it! It’s definitely therapeutic.
So here we are with this absolutely delicious cupcake recipe that has the perfect balance of apple and spice flavoring, not overwhelming at all. I also love how they are sweet, but not too sweet. Which is especially great when adding these to a dessert table, where there is plenty of sweetness happening.
Apple Cider Cupcakes Frosted with Cinnamon Honey Butter
Ingredients:
- Moist Yellow Cake Mix (along with required ingredients)
- which is usually 2 eggs, and 1/2 cup vegetable oil
- Apple Cider, storebought
- Cinnamon Honey Butter
- A few Honey-Crisp Apples
- 1/2 teaspoon of pumpkin spice (it’s an actual spice called “pumpkin spice”)
Directions:
Follow the instructions on the yellow cake box, BUT instead of the water, use apple cider. This is the trick for that subtle, wonderful apple taste. Plus, it makes the cupcakes even more moist. Also mix in the spice. Pour halfway in each greased cupcake mold.
Bake at the required temperature and time stated on the cake mix box. Let cool completely. (important for butter frosting not to melt on the cupcakes)
When frosting the cinnamon honey butter, make sure it is room temperature, so it’s easy to smear and not too chunky. Garnish each with a sliver of Honey-Crisp apple. Why Honey-Crisp apple? Because they are the sweetness most delicious apples IMO 🙃
I purchase my honey butter at Walmart, they usually have a couple of brands in stock and they’re all yummy. I listed several options in the ingredients to look for online/in-store.
