If it’s a salad, I will eat it. If it’s a salad that skips the lettuce and opts for veggies, I will love it. If it’s a salad that also has garbanzos (chickpeas) I will not share it.

But I will share the recipe to this Easy Creamy Italian Salad Appetizer. It’s creamy, but also light. And while it’s yummy enough to eat all year long, something about this salad makes me crave for spring and summer gatherings where it would be an especially perfect appetizer or side dish.

Easy Creamy Italian Salad Appetizer Recipe

Servings: 6


  • 2 cucumbers, sliced and halved
  • 2 medium sized tomatoes, sliced and cubed
  • half of 1 small medium onion, sliced
  • 1 can of chickpeas, rinsed
  • 1/2 cup of light sour cream
  • 3 TBS light mayonnaise
  • 1 TBS sesame oil or olive oil
  • 2 TBS Italian seasoning
  • 2 TBS rice vinegar
  • 3 TBS honey
  • 1/2 TBS salt
  • 2 garlic cloves, minced


In a bowl, mix together mayonnaise, sour cream, rice vinegar, Italian seasoning, minced garlic, salt, pepper, and honey. Set side. On a cutting board slice your onions into 1 inch pieces, slice and half the cucumbers and slice and cube the tomatoes. Drain and rinse the chickpeas. Pour all of the veggies and chickpeas in the bowl and mix until combined and covered in dressing.


If you can chill the dressing prior to mixing in the chickpeas and veggies, it will gain a little thickness which I really like. Even just 20 minutes will work.

This is definitely one of those recipes where you can tweak it depending on your particular tastes. None of the ingredients in the dressing are too intense that you can mess it up if you’re tasting along the way.
