Snacks are life. Am I right? I’m always looking to stock my pantry/fridge with easy to grab snacks that are protein packed for when I’m crunched for time or just not in the mood to be in the kitchen. I’ve especially loved having these with my morning coffee and before/after my workouts.
I created these Nutty Coconut Protein Balls just a week ago and they are already a household favorite.
It takes only several minutes to make roughly 16 of these delicious balls that each packed with fiber and 5grams of protein! Just put all of the ingredients in a food processor, roll into balls and boom. There are healthy snacks waiting for you in your fridge whenever you need/want.
I chose to drizzle the Nutty Coconut Protein Balls with 60% cacao dark chocolate, to add a little extra touch of bitter-sweetness, but you can top them with crushed nuts or coconut flakes too.
Nutty Coconut Protein Balls
Servings: approx. 16
Ingredients:

1 cup quick oats

1 cup shredded organic coconut (unsweetened)

1/2 cup smooth natural peanut butter

1/4 cup organic cashews
- 1/4 cup organic peanuts

1/4 cup pitted Medjool dates

3/4 teaspoon cinnamon

3 tablespoons coconut oil

3 tablespoons pure maple syrup
- 1/4 cup melted dark chocolate for drizzling

3/4 teaspoon salt
- 1 tsp vanilla extract
Directions:
Place all ingredients in a food processor and process until there are no clumps. While the mix doesn’t need to be fine, you want it to be smooth enough to combine nicely into balls and they keep their shape.
Form into balls roughly the size of golf balls. Drizzle with chocolate or your preferred topping and place in fridge to firm for 15 minutes. I keep mine the fridge for freshness and so they do stay firm.
