Soup is always a cozy meal to enjoy, but right now it’s never been more comforting to sip a warm and flavorful bowl. I have a hard time not serving myself endless bowls of this Cozy Rice and Veggie Soup. It’s full of flavor, but also simple. No overwhelming tastes. And I love how the rice adds such a yummy texture to soup.
Cozy Rice and Veggie Soup
Servings: 10 (perfect to have lots of leftovers right now)
Ingredients:
- 2 32oz. cartons veggie broth
- 2 chopped carrots
- 1 cup of corn
- 2 chicken bouillon cubes
- 2 chopped celery stalks
- 1 cup heavy cream
- salt and pepper to taste, about 1/2 tbs of each will do
- 1/2 tbs garlic powder
- 2 cups spinach
- 1 small onion, whole to just add it’s flavor to the soup
- 2 cups uncooked rice
Directions:
Set stovetop to medium. Put all ingredients except rice into stockpot. Cook until everything softens, roughly 15-20 minutes-stirring occasionally. Add rice and cook for another 20 minutes-stirring occasionally. Then turn off heat and allow rice to swell and absorb the broth and let all of the flavors come together for an hour. Remove onion and serve!
