So we’re approaching a holiday in quarantine and that feels extra weird. Easter is usually a day most like to spend with loved ones-friends, family or both. Navigating the everyday is hard enough during this time, but figuring out how to celebrate holidays is a whole other level of what the heck.
I do think the simplest way we can make Easter and any other upcoming holiday we are stuck in quarantine during feel like an actual day to celebrate and not just any other day is with food. Stick to making your traditional holiday dishes or choose something new and festive to make-even if you usually don’t. I think this small gesture will give the day a real special feel and let it stand out.
These Bailey’s Easter Dirt Cups are as tasty as they are cute. I thought adding the creamy deliciousness of Bailey’s would be a yummy touch to dirt cups, making them a perfect adult treat to enjoy after Easter dinner or lunch. You can also omit the Bailey’s completely or once you make the dirt cup mix, split it into two and spike one half.
The second I finished making these and photographing them I stuffed my face with one. So good. I don’t even like chocolate and I love this little dessert. And it really couldn’t be easier to make!
Bailey’s Easter Dirt Cups
Servings: 6 large, 10 small
Ingredients:
- 8 oz container cool whip, thawed out a little
- 2 1/2 rows of Oreos, crushed
- Cadbury eggs
- 6 tbs Bailey’s
- 2 cups whole milk, cold
- 1 package of dark chocolate pudding mix, I used ghirardelli
Directions:
Whisk together the pudding mix and milk to make the pudding. Let it sit for 5 minutes to thicken. Whisk in 2/3 of the crushed Oreos, Bailey’s and cool whip. Place the mixture evenly into serving glasses. Pour the remainder of the crushed Oreos on top of each along with a few Cadbury eggs.
