Easy Chicken Salad Recipe

Say hello to what I’ve been eating for lunch 3-4 days a week for the past 2 months. Which is weird for me, because I actually get tired of meals pretty quickly. However, not with this Easy Chicken Salad Recipe.

Because it’s refrigerated, this salad is refreshing and perfect to enjoy outdoors and pack for a picnic. All of the crisps of the celery, apples and grapes makes it light and so enjoyable. I really love it!

I think it would go lovely spread on a toasted croissant or brioche bread too!

Easy Chicken Salad Recipe

Servings: 6


  • 1 store-bought rotisserie chicken, shredded
  • 2 tbsp olive oil
  • 2 celery ribs, chopped
  • 1 1/4 cup red seedless grapes, halved
  • 1/2 cup sliced almonds
  • 3 tbs lemon juice
  • 3 green onions, thinly sliced
  • 1 1/2 cup green apples, chopped into small cubes
  • 2 tbsp fresh dill, chopped
  • 3/4 cup light mayonnaise
  • 1 tbsp Dijon mustard
  • pinch of salt
  • pinch of ground pepper


Shred the chicken, with or without skin. Place all dry ingredients in a bowl, then add in the wet ingredients and mix together well. Keep refrigerated. Stays fresh 3-4 days.
